We never would have imagined including the words “aquarium” and “hip” in a sentence, but, alas, here we are. Todd English has been a culinary pioneer for decades. With restaurants across the country, we are continually amazed by Bluezoo by Todd English at the Walt Disney World Dolphin Hotel in Lake Buena Vista, Florida. The space is chic and modern with glass accents and aquariums, resulting in a totally unique space.
Meals begin with a glass of wine from their award-winning wine list – multiple winner of the Wine Spectator’s Award of Excellence. The menu changes frequently to reflect what’s available in season, but the theme is always the same: intercoastal seafood delights. Seared teppan sea scallops with a braised short rib and mashed cauliflower remain a menu favorite while their grilled octopus is a fun spin on the classic entrée. The classic grilled presentation gets a Greek-inspired makeover, adding the elements of mashed chickpeas and Aleppo pepper. Bluezoo’s signature clam chowder is an upgraded version of the beloved chowder and uses salted bacon and homemade oyster crackers.
The highlight, however, is their “just fish” menu offering created from one of the nightly fresh fish offerings, paired with a series of sauces, including charred tomato sauce or hot Dijon crabmeat. .
